Abstract


An experimental study was carried out to review three methods of general quantitative determination of dye in food, that is, the wool thread method, the Polyamide method and the liquid anion exchange resin (Amberlite LA-2) method.
The wool thread method is worse than the other two methods in recovering rate of colors in foods especially with other additives.
The Polyamide method is superior in separating acid dye and need small amount of it (0.5∼1.0g) and it´s recovering rate is better than that of the wool thread method.
The Amberlite LA-2 method is superior to the above mentioned methods, because not only the experiments can be generally performed regardless of the kind of food, but also the recories are the best among these methods, if R-3 is extracted by ether many times.
