Abstract


The authors conducted a survey which could show ammonia nitrogen contents in the fresh and processed fish and shells sold in Seoul area during a 6 day period from August 8 to August 14 1962, using Conway´s apparatus. and the following results have been obtained:
1. Among fresh fish and shells surveyed, mackerel revealed the higyest NH₃-N values; butter- fish, sping-lobster, half-beak, hair-tail and shark had moderately high values: abalone and poulp had values within normal limits, when interpreted from the view-point of health.
2. Among salted or processed fish and shells surveyed, salted yellow- tail revealed the highest NH₃-H value; salted hair-tail, salted mackerel, salted half-beak, salted and dried yellow-tail, salted small sardine and oyster had moderately high values; salted sping-lobster had the lowest value, but still above normal limits, when interperted from the view-point of health.
3. Low NH₃-H contents have been detected among fresh fish and shells, in general comparison with the contents among salted or processed fish and shells.
