Abstract


To conquer the irregular meal time caused by various operational flying and to make provide against aircraft accident, such as emergency landing or crash accident, substitute food and survival rations were produced by trial.
The substitute food which allow for Korean peoples palate was manufactured for trial under the special menu for pilot.
1) Food, which is liberal in protein content, bland, palatable and easily digestive 2) Food rich in fat, highly seasoned, and containing large amount of roughage were avoided
3) Also gas fuming diet was diminished
The emergency rations were designed to use in the drinking water limited area and in the case of. emergency.
All of these rations are dehydrated, concentrated with high carbohydrate, low in fat. and protein.
Also, in order to recover from flying fatigue, we manufactured for trial food in aluminium container using ginseng extract, raw material extract of some Chinese drugs, chocolate, raisen juice with high content of sugar.
Classification of aviation emergency rations according to service is as follows: 1) Substitute food: * Bread and Meat Pudding (800 Cal in food energy)
* Seasoned and Dehydrated Rice (724 Cal)
2) Survival rations: * Rice Bar (356 Cal in food energy per 100 g) * Cocoa. Bar (389 Cal in food energy per 100 g)
* Biscuit Bar (369 Cal in food energy per 100 g) Ginseng Biscuit ( 239 Cal in food energy per 50 g)
Remon Juice Powder and Ginseng Chocolate 3) Food in aluminium container:
* Sang Wha -Extract (Some Chinese drug) * Ginseng Extract
* Chocolate Gel
* Raisen Extract
We observod that all of above rations were acceptable through sensory panel test.
